Serves 4
Ingredients:
- 1 tablespoon extra virgin olive oil
- 4 spring onions, chopped
- 225g mangetout
- 225g asparagus, cut into small pieces
- 1 tin of canned water chestnuts, drained and sliced
- 1 teaspoon sea salt
- 3 tablespoon water
- 1 teaspoon sesame oil
Method:
- Heat the oil in a wok or deep frying pan over moderate heat and stir-fry the spring onions for 3 seconds. Add the managetout, asparagus and water chestnuts, toss well in the oil and cook for 1 minute. Add the remaining ingredients and stir-fry for a further 3 minutes.
- Transfer to a warmed serving dish and serve at once.
